1 block firm tofu
50-60 grams palak/ spinach
3-4 cloves of garlic, finely chopped
½ inch ginger, finely chopped
1 green chilli, finely chopped
1 onions, finely chopped
1 tomato, finely chopped
1 tsp kasturi methi
Cashew paste (Soak and blend 8-10 cashews)
Handful of finely chopped spinach and coriander leaves.
Water for cooking
Boil tofu cubes exactly for 2 minutes in the same water as palak. Set them aside.
To a pan brush some canola oil. Add in onion, garlic, ginger and green chillies. Sauté for a min. Add in tomatoes, spice powders, spinach, coriander, kasuri methi. Saute for 2 minutes.
Add in the cashew paste, cook for 30-60 seconds and turn off the heat.
Assemble brown rice, palak tofu and raw/ steamed vegetables in a bowl and serve
