Blend the ingredients to a smooth paste. Add in salt and pepper and set this aside.
For the mango salsa, mix together onion, tomatoes, sweet corn and fresh mangoes, crushed black cumin seeds, some purple cabbage, salt and a squeeze of lemon. Toss all the ingredients till well combined.
For the buddha bowl, add roughly chopped kale, red rice, mango salsa, steamed broccoli, chickpeas, purple cabbage, sweet potato and the dressing!
