10 garlic finely chopped
1/2 inch ginger
3-4 green onion heads
1-2 green chillies
8-10 Mushrooms, chopped in half
6-8 baby corns, slit vertically
1 red bell pepper, chopped
1 tbsp soy sauce
1 tsp siracha
1/4 cup water with corn starch
100 grams Cooked soba noodles
Sprinkle with sesame seeds and green onion
Bring 2 cups water to boil, add in soba noodles and cook for 5 min or as per time mentioned on the package. Once done, Dip the noodles in cold water and set aside.
Pre-heat a pan and saute chillies, heads of green onion, ginger and garlic.
Add in sliced mushrooms, baby corn and cook till the mushrooms start to release water.
Water released from mushrooms is enough to cook the vegetables. You do not have to add oil or water.
Once the vegetables are cooked, add in salt, soy sauce, siracha and corn starch water. Stir till all the ingredients are well combined.
Add in the cooked soba noodles and stir well to combine all ingredients.
Chilli Garlic Noodles are ready! Sprinkle more green onions as toppings and serve the noodles hot.
