1. 1 big onion
2. 1 tbsp nutritional yeast
3. 1 tsp ginger garlic paste
4. 1/2 tsp each - Spices (Red chili powder, Turmeric powder, Tikka masala/ paparika and Lemon pepper powder)
5. 8-10 almonds
6. Coriander leaves
7. Cashew butter
8. Purple cabbage 1/2 cup
9. Baby corn 1/2 cup
10. Mushroom 1/2 cup
11. Capsicum 1/4 cup
12. Carrots 1/2 cup
13. Vegan parmesan a pinch
14. Salt
1. Onion paste: Blend onion, nutritional yeast, ginger garlic paste, spices, salt, almonds and coriander leaves to form paste.
i. Add a tsp of cashew butter and saute the onion paste for 1 minute.
ii. Add in the rainbow coloured veggies and cook for 5 minutes.
iii. Serve the hot soup with steamed noodles.
iv. Top the dish with vegan parmesan and chopped almonds.
