This could be a filling breakfast or an early dinner. Western breakfast in Indian style. Chickpea scramble is power packed with the goodness of spinach and avocado, its an enjoyable way to take in the greens. While eating this scramble you will find it hard to believe it actually fulfils your daily iron, protein and goodness intake.

Chickpeas area rich source of vitamins, minerals and fibre, with health benefits like improving digestion and weight management. Chickpeas are high in protein and filling, its an excellent alternative to animal-based proteins.

Spinach is an extremely nutrient-rich vegetable. Spinach is an excellent source of vitamins and minerals including:
It is high in Vitamin A which helps our skin and mucous membranes to repel various kinds of bacteria and viruses effectively.
2 cups (200g) cooked chickpeas, drained
½ tsp. turmeric
½ tsp. paprika
1 puff spray oil
1 small onion, finely diced
2 cloves garlic, minced
½ tsp. paprika
8 oz. (230g) spinach
½ avocado
Mash the chickpeas with a fork, leaving some whole. Mix in the turmeric and paprika, and season with salt and pepper.
Spray oil in a pan over medium-high heat and sauté the onion and garlic for 2-3 minutes, until fragrant.
Next, add in the mashed chickpeas and cook for another 5 minutes, you might need to add some water. Then transfer to a bowl, cover with tin foil and set aside. Using the same pan wilt the spinach, adding some soy sauce.
Once ready, divide the spinach between 2 bowls, top with the chickpeas and serve with ¼ avocado. You could add a slice of toasted coconut on the side for some extra crunch!
