Now this recipe could either be used as a snack or lunch idea on toast or eat it as is like a salad.
The spiciness from paprika and garlic with the earthiness of chickpeas this pair matches heavenly. And the best part is, it just takes a couple minutes and you have got yourself a very wholesome delicious snack or light meal.

Ezekiel bread contains several different types of grains and legumes:
- 4 types of cereal grains: wheat, millet, barley and spelt
- 2 types of legumes: soybeans and lentilsIt’s certainly a lot better than 99% of the breads on store shelves, which are usually made from refined wheat and often contain lots of sugar. A healthier choice than conventional white bread.
1 puff spray oil.
2 shallots, diced
2 cloves garlic, minced
½ tsp. smoked paprika
½ tsp. sweet paprika
1 cup (14oz./400g) chopped tomatoes
1 cup (14oz./200g) chickpeas, cooked.
6 slices Ezekiel bread, toasted
Handful parsley, to garnish
15- 16 olives, halved, to garnish
Spray oil to a medium heat pan. Add shallots and cook for 2-3 minutes, then add garlic and cook for another 1-2 minutes.
Add all the spices to the pan and mix well. Next add in the chopped tomatoes and 2 tbsp. of water. Simmer on low-medium heat until the sauce has reduced, around 10 minutes.
Mix in the drained chickpeas, season with salt and black pepper and cook for another 5 minutes until warmed through.
Serve on the toasted bread with parsley and black olives.
