Are you a fan of noodles in soup? If you said yes, then this Burmese Khow suey is perfect for
you! Khao Suey is made with an aromatic coconut milk base, an assortment of fun toppings,
and lots and lots of veggies.
Burmese Khow Suey is a Burmese noodles dish. In this dish, noodles are served in an aromatic
coconut milk broth. There are also veggies and lots of fun toppings such as peanuts and onions.
It is flavorful, delicious, and comforting.
Unfortunately, coconut milk is one of the crucial ingredients in Khao Suey that gives this dish a
nice flavour. However, if you want to reduce the fat content from coconut milk, you can switch
to using thin coconut milk. Further, you can add a bit of besan or chickpea flour to thicken up
the soup and then use light coconut milk for the aroma and flavour.
You can use a variety of toppings for this dish. Eating this soup with different toppings will let
you experience the different textures. You may even find the flavours exploding in one
mouthful! Generally, the most common toppings are chopped spring onions, roasted crushed
peanuts, fried garlic, chillies cilantro, fried onions, and fresh onions are added to this dish.
Khow Suey is a one-pot meal accompanied with noodles and veggies cooked in coconut milk and
garnished with peanuts and fried garlic. Explore this Burmese delicacy with an authentic burst of
flavours.
2 onions
4-5 garlic pods
Ginger
3-4 chillies
Coriander stem
oil
1 tsp red chilli powder
1 tsp turmeric powder
1 tsp coriander powder
1 tsp cumin powder
1 cup mushroom
1 cup broccoli
3-4 carrots
1 cup beans
1 cup corn
2 cups vegetable broth
2 cup coconut milk
Fried onions (1/2 onion)
Fried garlic ( 8-10 pods)
Coriander leaves
Blend 2 onions, 4-5 garlic pods, a tiny piece of ginger, 3-4 chillies and coriander stem into a paste.
Heat oil and saute the onion paste with these powders - red chilli, turmeric, coriander and cumin powder.
Add in the veggies of your choice.
Add vegetable broth and coconut milk in the ratio of 2:1 and cook well.
Fried onion, fried garlic and some coriander leaves.
To make it more traditional add these spice powders > Clove, fennel, cinnamon, black pepper and sichuan red pepper. Top the khow suey with some chilli oil!
